Summer belongs to the southern coast, though inland areas can turn uncomfortably hot. Cappadocia's balloon flights launch at dawn and depend heavily on the weather — they're often cancelled on windy mornings.
Food
Turkish kebab varies sharply by region — spicy Adana, milder Urfa — alongside generous meze spreads, börek pastries and balık ekmek, the fish sandwich sold around Eminönü. Getting around
Within Istanbul, the tram, metro and Bosphorus ferries cover most needs — crossing between Europe and Asia by ferry is an experience in itself.
